For the shrimp
  • 1 pound shrimp, peeled and deveined
  • 1 shallot, finely chopped
  • 3 garlic cloves
  • 2 sprigs of thyme
  • Kosher salt and pepper
For the 123 Cocktail Sauce
  • 1 cup ketchup
  • 2 tablespoons horseradish
  • 3 tablespoons sambal
  • Pepper


1. Marinate the shrimp.

Place shrimp, shallot, garlic, thyme, salt and pepper into a plastic zip-top bag. Refrigerate for at least 30 minutes or up to 24 hours.


2. Cook the shrimp.

Heat a grill to high heat. Add shrimp and cook for 1-2 minutes per side. Remove shrimp and chill before serving.


3. Make the sauce.

Combine all ingredients in a bowl and mix. Season with a little pinch of salt and lots of cracked black pepper.
